Apple has (with a few exceptions) moved to a fully Unicode system where all fonts normally have the same characters on the keys, so changing the font makes no difference in what Keyboard Viewer shows, and the font menu was eliminated.
For Wingdings and other symbols you should use the Character Viewer. Unicode makes sure that your symbols are seen by everyone as symbols and not sometimes as letters, which was the case with legacy symbol fonts.
If you don't see the Dingbats category in your Character Viewer, activate it by going to the gear wheel at the top left and select Customize.
